Budget Recipe of the Week

Every week I’m going to feature a budget recipe; this can be budget on money, time or both.  Either way it will be easy enough for a busy family to get dinner on the table and spend some quality time together.  Who knows, you may even get your kids and family involved.

Sausage, Broccoli & Noodles

Makes: 4 servings
Prep: 10 minuets
Cook time: 11 minuets

3 packages (3oz. each) Ramen Noodle Soup, chicken Flavor
¼ cup sour cream (you can use reduced-fat)
1 Tablespoon cornstarch
3 links sweet Italian Turkey sausage, casings removed
3 cups frozen baby broccoli flowerets, thawed

  1. Bring a large pot of salted water to a boil.  Cook noodles for 2 minuets, reserving seasoning packets for later; drain and set aside.  In a small bowl, stir together sour cream and cornstarch; set aside.
  2. Cook sausage in a large nonstick skillet over medium heat, breaking up with a spoon, for 5 minuets or until cooked through.
  3. Add broccoli, 1-cup water and 1½ teaspoons of the ramen chicken seasoning to skillet.  Cover and simmer over medium heat for 3 minuets or until broccoli is cooked through.
  4. Remove cover and stir sour cream mixture into skillet.  Cook for 1 minuet or until sauce has thickened.  Add noodles to skillet and toss to coat with sauce.  Serve immediately.

Per Serving: 392 Calories; 11g fat (2 sat fat); 19g protein; 55g carbohydrates; 6g fiber; 886mg sodium; 45mg cholesterol
