Every week I’m going to feature a budget recipe; this can be budget on money, time or both. Either way it will be easy enough for a busy family to get dinner on the table and spend some quality time together. Who knows, you may even get your kids and family involved.
This week’s recipe was an accident, but a good one. I needed to use up some leftovers, and had already had them once as a “I don’t want to cook night”. So I needed to do a “leftover makeover”. Here’s what I did.
Makes: 1-9” Quiche
Serves: approx. 4-6
Prep Time: 15 minuets
Cook Time: 30 minuets
* Keep in mind the ingredient quantities may vary slightly.
8 Eggs
½ – ¾ cup Half & Half
2 Cups Leftovers chopped up
Salt & Pepper to taste
Seasoning of choice to taste
1 cup Shredded Cheese of choice
Pre-heat oven to 350° and grease 9” tart or pie plate with non-stick spray. Cut up leftovers in bite size pieces. I used leftovers from Ham dinner (Ham Steak, Oven-roasted potatoes, and Peas). Place all in a medium sized bowl; add Cheese, salt, pepper, and seasoning of choice (McCormick’s Italian season grinders). In a separate bowl whisk eggs and half & half until scrambled, then pour onto leftovers and stir together. Place in 9” pan; spread it out making to top even and bake for 30 minuets or until center is firm and edges are golden. Cool for 5 minuets and enjoy.
